Grouse shooting over Setters has always been and will remain to be one of the most important aspects of the Upperwood Kennel. Dom Goutorbe, like his sister before him and father before her, will be in the Highlands of Scotland every year with a team of fully trained Setters for the start of the grouse shooting season.
Dom and his dogs are hired on a day to day basis to work on actual shoots to shoot grouse in the traditional of way 'over dogs'. If you simply want to shoot grouse in whatever form it comes, then shooting over setters probably isn't for you and a normal 'walked up' day would be more to your liking. Shooting over Upperwood Setters or any good team of good Setters and Pointers is unlike any other type of shooting. The sport does not particularly come from the actual shot, as driven grouse shooting will always offer a more challenging shot. However, if you appreciate a 'good dog', whilst spending a laid back day, having the 'crack' with a small group of like minded people, where you are asked to be selective in what you shoot, whilst admiring some of Britain's most stunning countryside, then a day shooting over Setters is a must. The Gamekeeper of the estate will always be in charge of the day and it will be up to him which part of the estate will be shot. He will often choose the ground and wind direction which best suits the dogs. There is no line of guns (like on the more common 'walked up' days) and there is no need to even have guns loaded until the dog working comes on point and Dom gives the okay to load up. When the dog goes on point Dom will take just two guns to the point. Each gun will flank the dog by about 20 yards and then Dom will give the command to the dog to produce the birds when the guns are in a safe and sporting position. No body wants to see coveys of grouse wiped out so it is asked that guns be selective and where possible to shoot the old birds from a covey.
